- 1/4 cup chia seeds
- 1 cup coconut cream (full-fat coconut milk works too)
- 1/2 cup pumpkin puree (canned or homemade)
- 2-3 sugar or honey
- 1/2 teaspoon pumpkin pie spice (adjust to taste)
- 1/2 teaspoon pure vanilla extract
- Hawaiian black lava salt
- Optional toppings: chopped nuts, shredded coconut, or a dollop of whipped cream
1. In a mixing bowl, combine the chia seeds, coconut cream, pumpkin puree, maple syrup (or honey), pumpkin pie spice, vanilla extract, and a pinch of salt.
